I am sure many of you know the Lord of the Barflies himself, Mr Roy “Aqvavitae” Duff, and have seen the online buzz around his Single cask release of a special bottle of Loch Lomond whisky. For edition 3, our Master Blender Michael Henry has chosen an extra-long fermentation time of 3 weeks, which further accentuates the delicate fruit flavours evident in the finished product. The longer fermentation time allows the distilling yeast to produce all the flavours they can before a secondary bacterial fermentation occurs. Diluted the rain stopped and the sun came out so we sat outside enjoying Victoria sponge cake, a cinnamon sweet apple turnover and pastries with a vanilla and fruit filling. Some then finished with an espresso coffee, others with lavender tea and we were all crunching away on almond biscotti biscuits – what a beautiful bizarre story!
