Description

The rum-making process at Cihuatan is a testament to both tradition and innovation. The sugarcane used is grown in fields owned by the distillery, ensuring control over the quality of the primary ingredient. After harvesting, the sugarcane is processed to extract the juice, which is then fermented. The fermented juice, or "wash," is distilled in modern column stills, producing a clean and robust spirit.
