Don’t you just love recipes with only a few ingredients. Even better when those are things you often have in your larder/store cupboard. Sugar, Cocoa Mass, Vegetable Oils (Palm Oil, Sal Oil, Shea Oil, Cottonseed Oil, Mango Oil, Rapeseed Oil, Sunflower Oil), Glucose Syrup, Guinness Beer (6%) (contains Barley, Gluten), Cocoa Butter, Dried Whole Milk, Neutral Spirit, Dried Skimmed Milk, Dextrose, Flavourings (Malt Beer, Vanilla), Humectant (Sorbitol Syrup), Emulsifier (Soya Lecithin). If using double cream, add it and beat until you have a spreadable consistency. If using whipping cream, whisk first to soft peaks, add a couple of spoonfuls into the cream cheese mixture and once this is combined, fold in the rest. Melt the dark and milk chocolate together to get a really rich chocolatey base for your Guinness truffles. Do not add the white chocolate, that comes right at the end, so don’t eat it while you are doing everything else and polishing off the bottle of Guinness too. Beyond the sip—you guessed it—I created these gold dusted truffles with some. It’s rich, decadent and most of all – SO EASY TO MAKE! These truffles are made for gifting. What more can I say? What could be more Irish than gorgeous Guinness and throwing chocolate into the mix just makes almost anything a wee bit more special.

To start, open Guinness Imperial Gingerbread Spiced Stout while you prepare this so that it flattens a bit. If you’re making your truffles ahead of time, plan to re-roll just prior to serving, as the ganache will gradually absorb the cocoa powder. Pour the Guinness into a large wide saucepan, add the butter — in spoons or slices — and heat until the butter's melted, at which time you should whisk in the cocoa and sugar.
