Perfectly matured over time in American Oak, our gently maturing Whiskey blend is finished in the finest Oloroso Sherry casks from Jerez. Finished for a minimum of 6 months, the process enhances the golden liquid’s outstanding character and flavor.

The Ninth Wave bottle is adorned with the Celtic Triskellion, and the story behind it has deep roots in Celtic mythology. Since opening, Hinch has won many awards in the drinks and hospitality industry. Most recently, ‘Best Food Export’ at the Grocer Marketing Awards 2023. Other attractions: Montalto Estate and Kinedale Donkeys are two great attractions in Ballynahinch. Let’s Go Hydro in nearby Carryduff is also a great activity. Taste: Pepper. Orange and apricot. Toffee and chocolate biscuits. Subtly oaky finish with a touch of honeyed malt. Smell: It’s not the most appealing nose upon first introduction. There’s even a slight paint-stripper / white spirit note. With time the harsher notes evaporate however, leaving lots of cereal and vanilla cream. There’s citrus, lemon drizzle cake, digestive biscuits and some honey too.
