About this deal

The same 2009 study in The Journal of Alimentary Pharmacology and Therapeutics of 465 Celiac disease patients 16 months gluten-free found that 65% still had “persistent intraepithelial lymphocytosis,” a.k.a. inflammation in the gut. [4] This is remarkable because even though the point of the study was to show that gluten increases zonulin production, the controls were eating gluten yet had infinitesimal levels of zonulin production, while the celiacs had not eaten gluten for at least two years yet still had very high levels of zonulin production. This suggests that something besides gluten may be causing zonulin production in celiacs. Alan’s extensive and sophisticated knowledge reaches a remarkably diverse audience who are searching for a unique perspective. His work covers a range of issues that are becoming increasingly relevant in society today: farming, “fake” meat, GMOs, nuclear energy, public sentiment about economic policy, sports, and any aspect of culture where people invoke the idea of ‘natural’ being best.

Here they measured trans-epithelial electrical resistance (TEER) of intestinal tissue taken from gluten-free celiacs and gluten-eating controls. TEER is an estimation of the leakiness of the gut, where a lower value indicates a greater level of leakiness or permeability. They found that tissues taken from controls who had been eating gluten had three-fold less leakiness compared to celiacs who had been off gluten for over two years. This, again, suggests that something besides gluten may be contributing to leaky gut in people with celiac. That means after 10 years of being gluten-free, HALF of all Celiacs are likely starving for the critical nutrients required for health and longevity. It’s no wonder we have a 77X increased risk for lymphoma. [8] The Gluten-Free Diet Doesn’t Fix Leaky Gut This means that, at some time, complete recovery of intestinal villous may not have occurred and an inflammatory process may have persisted.” [10] How much do you think fad dieting is a response to the massive expansion of food choices available to us? It can be a confusing world to navigate—so many options, so many ethically-fraught factors. Put down that gluten-free paleo muffin and cold-pressed green juice and listen up: Alan Levinovitz wants to cure you of your Dr. Ozitis.

In some ways, magical thinking is more like science than religious faith. Magic is governed by simple and intuitively plausible laws that explain the natural world without supernatural forces: beet juice is red, blood is red, therefore drinking beet juice ought to replenish blood. It makes so much sense—but is totally incorrect. Believing that beet juice turns into blood is simply bad science, in the same way that believing in paradise past is bad history.” Like people with Celiac disease that follow a strict gluten-free diet and don’t get better… Does that Mean the Gluten-Free Diet is the Wrong Prescription for Celiac Disease? urn:lcp:glutenlieothermy0000levi:epub:08c1c39c-fe52-4b2d-9ffb-63e2c5f3babf Foldoutcount 0 Identifier glutenlieothermy0000levi Identifier-ark ark:/13960/s2b3h7spf0h Invoice 1652 Isbn 9781941393062 Another thing that bugs me is that the author of this book is a religionist. He is a scholar, so I have no doubts he is a smart guy, however nutrition is obviously not his field. That is why I found it ridiculous when he was making fun about the 2 guys, who came up with paleo (I think?) saying that they are not really experts, because they are only cardiologists....ehm...ok....you are a freaking religionist so how does that add up?:D

Well, I want to be very careful, right. Raw vegetables are not better for you than TV dinners, without any further context. If one person only eats raw broccoli, while you eat a lot of Amy’s frozen enchiladas, you’re probably better off than the person who only eats raw broccoli. I understand that’s not what you’re saying, but there’s a lot of that oversimplification in diet rhetoric. That blend of nostalgia and anxiety reminds me of the main character in Woody Allen’s Midnight in Paris who romanticizes 1920s Paris, until he actually travels there and discovers that Parisians of the ‘20s are fantasizing about the 1890s …and so on. We look to other times and other cultures for supposedly healthier, more authentic ways of eating. Okay. So, why didn’t this poll do that? “With regard to layout”, the researchers conceded, “it might be argued that a double blind…study might have been best. Another 2010 study in the American Journal of Gastroenterology looked at 381 adults with biopsy-proven Celiac disease. The authors found small intestine mucosal recovery occurred in only 34% of participants following a gluten-free diet for 2 years. They concluded:

Complete normalization of duodenal lesions is exceptionally rare in adult coeliac patients despite adherence to GFD.” [2]In other words, if you’re a symptom-free Celiac and your labs show signs of gut inflammation… you’re going to die much sooner than you think. So, Should Celiacs Eat a Gluten-Free Diet? We know gut inflammation is associated with a laundry list of health issues, including cancer and early death. That’s bad news for the conventional Celiac prescription and even worse news for the people not getting better on a gluten-free diet. Want more evidence gluten-free doesn’t put the fire out? Those with Celiac disease (villous atrophy) had a 2.80-fold increased risk of death the first year after diagnosis and a 39% increased risk of death over the study period

And don't forget as Warren Zevon said about life ''How much you're supposed to enjoy every sandwich."I see a crisis of authenticity. We're all so afraid of being "fake." And so you hear people talk about eating "real" food, as if by magic you can become more real by eating real food. There's also the easy stigmatization of obese people, whose "sin" is visible—and often associated with class.
