I halved the recipe and made it two times in the week to serve with the Sorrel Broth (duck soup) recipe in the book. Mamushka came into the world — last year — when Cookbook Corner was dormant, and I have long since wanted to bring it to your attention. If you are curious and want to discover something new and learn more about Ukraine, I highly recommend this book. That’s not the case- it all comes together perfectly, the kidney beans are essential adding a textural aspect.

I would recommend it in spite of the issues - read your recipe before and consider where you may need to do some googling to fill the gaps in some of the doughes, etc - but subsequent releases need a serious review and edit. Add the red pepper and tomato purée to the onion and carrot and cook it out for 2 minutes, then add the grated fresh tomato, stir and reduce slightly before adding all of this to the broth.In any case, Hercules produces a tasty honey cake with sour cream - that doesn't require days of refrigeration for the layers to soften. Most recipes I tried, I will add to my repertoire, but my favourites were the “Cold Beetroot Soup”, the “Armenian Soup with Lamb and Prune Meatballs”, the “Grilled Vegetable Caviar”, the Georgian Kidney Bean Salad”, “Chilli and Garlic Cucumber”, and the “Azerbaijani Rice and Fruity Lamb”.
